Plant Based Paella

veggie paellaIngredients:
  • 1 cup white rice
  • 2 cups boiling water
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1 tbsp paprika
  • 1 tsp turmeric
  • 1 cup peas
  • 1 cup artichoke hearts, drained and quartered

Preparation:

Mix the rice and boiling water and let stand for 20 minutes, then pour off the water.

In the meantime, heat the oil in a large frying pan over medium heat and sautee the onion and garlic until the onion is transparent, about 5 minutes. Add the peppers and tomato and continue to sautee over medium heat for three minutes.

Add the rice and broth. Bring to a boil, then reduce the heat to a simmer. Add the salt, paprika and turmeric. Cover and simmer until the rice is tender, about 20 minutes.

Add the peas and artichoke hearts and cook about one minute longer.

    These recipes don’t say how many servings each makes. This information would be very helpful. To start with, how many servings does the paella make. It sounds just wonderful. I can’t wait to try it. Thanks so much.
