- 3-4 large carrots
- 2 tbs coconut oil
- Salt and pepper to taste
Simply cut the carrots into fry- like pieces, so they’re thin. Then toss the carrots in the coconut oil, salt, and pepper. Lastly, toss them in the oven, heated at 450 degrees, for about 45 minutes, or until brown.
Keep this plant based side simple! It goes great with a delicious Portobello Mushroom Burger or on its own as a snack while watching the big game!
