Stock up on your pumpkin pie spice and cans of pumpkin puree and get ready… because it’s pumpkin spice season!

We’ve rounded up the most delicious pumpkin spice inspired recipes on the web. All you need to do now is strap on your apron and get cooking! Now that it’s officially autumn, it’s time to embrace classic fall flavours. I love returning to warm and cozy recipes to make on a Sunday afternoon in the kitchen. These fit the bill, especially if you are craving pumpkin spice.

Did you know that Starbucks’ infamous pumpkin spice lattes are not vegan?

These recipes are all vegan and we even include a latte substitute which we think is even better than what you can order at Starbucks.

Gooey Pumpkin Spice Latte Chocolate Pudding Cake

You might consider pudding cakes to be a bit old fashioned. And you’re right. They are. I think fall is a good time accept that sometimes the best recipes are ones that your Granny might have made. And while you might think pudding cake is stodgy, this cake is anything but. It’s super healthy, gluten free, doesn’t use refined sugar, and has all of my favourite flavours – coffee, cinnamon, ginger, chocolate, and pumpkin… all in one delicious cake!

Pumpkin Gingerbread Snack Bars

These pumpkin gingerbread snack bars are gluten free and very healthy. They’re easy to make and work well as a snack to pack in lunches or throw in your purse on a busy day. If you’re as addicted to Lara bars as I am, trust that these are an excellent replacement and give a great energy boost while still being sweet enough to feel like a treat!

Healthy Vegan Pumpkin Spice Latte

Unfortunately Starbucks’ pumpkin spice latte syrup contains sweetened condensed milk, making it unsuitable for vegans even if the latte is made with non-dairy milk. This recipe is way healthier. Instead of sweetened condensed milk, it uses non-dairy milk of your choice and maple syrup to be creamy and sweet along with pumpkin puree, brewed coffee, vanilla, and pumpkin pie spice. Everything you (likely!) already have in your pantry, especially if you’re making these recipes. Plain and simple.

Pumpkin Spice Pancakes

Leave it to the Minimalist Baker to reliably supply us vegans with delicious and trendy recipes which are super simple! These pancakes are easy to prepare in one bowl, take only twenty minutes from start to finish, and don’t require any expensive or fancy ingredients. Your family will love waking up to them on a Saturday morning. Or, if it’s just for you (no judgements here!) this recipe is easy to freeze. You can pull out a pancake or two from the freezer anytime and pop them in the toaster for a quick and healthy vegan breakfast. Top with Earth Balance butter and maple syrup.
