Gooey Pumpkin Spice Latte Chocolate Pudding Cake

You might consider pudding cakes to be a bit old fashioned. And you’re right. They are. I think fall is a good time accept that sometimes the best recipes are ones that your Granny might have made. And while you might think pudding cake is stodgy, this cake is anything but. It’s super healthy, gluten free, doesn’t use refined sugar, and has all of my favourite flavours – coffee, cinnamon, ginger, chocolate, and pumpkin… all in one delicious cake!

Pumpkin Gingerbread Snack Bars

These pumpkin gingerbread snack bars are gluten free and very healthy. They’re easy to make and work well as a snack to pack in lunches or throw in your purse on a busy day. If you’re as addicted to Lara bars as I am, trust that these are an excellent replacement and give a great energy boost while still being sweet enough to feel like a treat!

Healthy Vegan Pumpkin Spice Latte

Unfortunately Starbucks’ pumpkin spice latte syrup contains sweetened condensed milk, making it unsuitable for vegans even if the latte is made with non-dairy milk. This recipe is way healthier. Instead of sweetened condensed milk, it uses non-dairy milk of your choice and maple syrup to be creamy and sweet along with pumpkin puree, brewed coffee, vanilla, and pumpkin pie spice. Everything you (likely!) already have in your pantry, especially if you’re making these recipes. Plain and simple.

Pumpkin Spice Pancakes
