And while you might think pudding cake is stodgy, this cake is anything but. It’s super healthy, gluten free, doesn’t use refined sugar, and has all of my favourite flavours – coffee, cinnamon, ginger, chocolate, and pumpkin… all in one delicious cake!

Unfortunately Starbucks’ pumpkin spice latte syrup contains sweetened condensed milk, making it unsuitable for vegans even if the latte is made with non-dairy milk. This recipe is way healthier. Instead of sweetened condensed milk, it uses non-dairy milk of your choice and maple syrup to be creamy and sweet along with pumpkin puree, brewed coffee, vanilla, and pumpkin pie spice. Everything you (likely!) already have in your pantry, especially if you’re making these recipes. Plain and simple.
