Black Bean Veggie Burger


– 1 10-oz. can diced tomatoes and mild green chilies, including liquid

– 1 15-oz. can black beans, well rinsed
1-2 garlic cloves

– ¼ – ½ bell pepper (red, orange or yellow), chopped

– 2-3 medium carrots, chopped

– 2 green onions, chopped

– 1/3 cup fresh parsley

– 2¾ cups quick rolled oats

– Buns, condiments and toppings


Heat oven to 450º.  Add tomatoes and chilies, beans, garlic cloves, bell pepper, carrots, green onions and parsley to blender and blend until very well combined.  Add bean mixture to a large bowl and combine with oats.  Form into patties and place on a baking sheet and bake for 10-12 minutes, flipping once the last few minutes.  Serve on toasted buns with your favorite condiments and toppings.
