- 8 russet potatoes diced
- 5 stalks of celery diced
- 1 yellow onion diced
- 1 bag of frozen carrots or 2 cups fresh carrots diced
- 1 bag frozen mashed Trader Joe’s sweet potatoes or 2 cups fresh mashed sweet potatoes
- 1 tablespoon Herbs de Provence – herb blend
- 32 oz. water
Directions
add all ingredients to a large stock pot or a crockpot.
stovetop: bring to boil, reduce heat to simmer for 1 hour or until potatoes are tender.
crockpot: cook on high for 4 hours or until potatoes are tender.
Top with optional seasonings: black pepper, a sprinkle of salt or sriracha hot sauce.
