Vegan Chicken Fajita

Delicious and versatile, fajita is used in many dishes. From tacos, over rice, to pasta, fajita is always flexible, always in style, and always has to be good. Check out our vegan version of this Tex-Mex favorite!

Vegan Chicken Fajita

Preparation: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes

Serves: 2

Ingredients

  • Tortillas or rice (optional base starches)
  • 1 Tablespoon extra virgin olive oil, for frying
  • 1 cup Beyond Meat chicken strips, thawed and sliced lengthwise
  • ½ green bell pepper, julienned
  • ½ red bell pepper, julienned
  • ½ yellow bell pepper, julienned
  • ½ lime, juiced
  • ¼ sweet onion, sliced thinly
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt, cumin, cayenne powder, and/or hot pepper sauce, to taste

Instructions

  1. Heat a skillet over medium-high heat and add olive oil.
  2. Once heated, add vegan chicken and onions. Cook until onions are semi-translucent and then add bell peppers. Season these ingredients with the lime, garlic, paprika, salt, cumin, and either hot pepper sauce or cayenne to taste (note: these do need to be adjusted to taste).
  3. Cook, while stirring often, until vegetables are well caramelized, then remove from heat and serve over rice, on a warm tortilla, or as is!
  4. Note: Guacamole is great over fajitas!
